I’m pleased to say that you’ve stumbled upon a one of a kind recipe! (Seriously, Google “bangle cookies” and you won’t find any!)
Very similar to a thumbprint cookie or a peanut blossom (the peanut butter cookies with a chocolate kiss on top), this is a yummy, simple, peanut butter cookie with a soft, chocolate – cream cheese filling.
They take a short amount of time to make and were such a hit with the family! One tip is to make them in a big batch and then freeze them, in between waxed paper layers.
Cookies:
2 sticks soft butter
2 cups brown sugar
1 1/2 cups creamy peanut butter
2 eggs
1 1/2 t. vanilla
2 1/2 cups flour
1 t. baking powder
1 t. baking soda
Filling:
3 ounces soft cream cheese
3 T. light corn syrup
1/2 t. vanilla
1 cup semi-sweet chocolate chips
1/2 cup powdered sugar
Start by mixing together the butter, brown sugar, and peanut butter. Mix until it’s well blended and then…
Add in the eggs and vanilla. Beat well!
In a separate bowl, stir together the flour, baking powder, and baking soda.
Gradually add the flour mixture into the peanut butter and stir gently until it’s all mixed in.
Shape into 1-inch balls and place on an ungreased cookie sheet.
Press your thumb gently into each ball…
Bake them at 350 degrees for 8 to 10 minutes.
When they come out of the oven, they’ll look like semi-flat little marshmallow-like cookies.. Take a teaspoon and press it in the middle of them to give them a dimple again, and then let cool for a few minutes!
Now for the yummy filling! Melt the chocolate chips in a bowl and set aside for a few minutes.
In another bowl, beat together the cream cheese, corn syrup, and vanilla. Stir into the chocolate, still beating together, and then gradually add in the powdered sugar. Beat together a little longer and then use a butter knife to gently swirl it onto the cookies.
Let sit for a few minutes and then store in an airtight container in the refrigerator.
Serve and enjoy!
