This recipe was in response to a request I’d received for a gluten-free cookie that tasted good! Some of the other things about this cookie included it being flour and sugar free, with no chocolate chips. And that’s where this recipe comes in. A mixture of raisins, oats, craisins, pecans, and other yummy things – This is sure to be a favorite among the entire family!
3/4 – 1 cup oat bran
1 1/2 cups oats (I liked the old-fashioned)
2 bananas, mashed
1/2 cup raisins
1/2 cup craisins
1/2 cup applesauce
1/2 t. vanilla
1/4 t. cinnamon
1/2 t. honey
1/8 t. nutmeg
1/8 t. salt
Start by combining the applesauce, vanilla, cinnamon, honey, nutmeg, and salt in a bowl.
In a large bowl, combine the oats, raisins, craisins, and pecans. Stir together and then add the applesauce mixture and bananas.
Place cookies on cookie sheet and flatten to desired thickness as they don’t spread during cooking. Bake at 325* for 17 – 20 minutes. Cool on a cookie rack and enjoy!
Gluten-Free Breakfast Cookie
Ingredients

- 2 banana mashed
- 1/2 cup raisins
- 1/2 cup craisins
- 1/2 cup applesauce

- 1/4 t. cinnamon

- 1/8 t. salt
Instructions
- Preheat oven to 325 degrees.
- Start by combining the applesauce, vanilla, cinnamon, honey, nutmeg, and salt.
- In another bowl, combine the oat bran, oats, mashed bananas, raisins, and craisins. Stir in the applesauce mixture.
- Place cookie dough in balls on a cookie sheet and flatten to desired thickness.
- Bake for 17-20 minutes and cool on a cookie rack.
