It’s been a couple of weeks since I posted on PGC, life has gotten so crazy with Christmas and family gatherings, shopping and then making time for just everyday life that the blog has been pushed to the sidelines for a while. Add to that a nasty cold and it’s really gotten a little hectic!
So here I am, back again today with this recipe for a favorite chowder. This simple soup is savory and bursting with flavor. You’ll grab a bite and get a mouthful of crisp corn, tender potatoes and spicy sausage – It’ll be an instant hit!
You’ll need:
1 pound ground sausage
1/2 cup onion, chopped
1/2 cup celery, chopped
6 cup water
4 medium potatoes, cut into 1/2-inch cubes
2 cup frozen corn
6 T. butter
1/2 cup flour
1/4 t. pepper
3 cup milk
4 t. chicken bouillon granules (or cubes)
8 oz. Velveeta cheese, cubed
To get started with this, brown the sausage, onion and celery in a large saucepan until the meat is no longer pink.
After the meat is browned, stir in the potatoes, water and bouillon. Bring to a boil, reduce the heat and then simmer for about 20 minutes.
After it’s simmered for 20 minutes, stir in the corn and let simmer again until potatoes are tender.
Now comes the part of the recipe that you’ve all been waiting for… The BUTTER!
*As a side note, I recently read where a person described butter as God’s current form in this century.. Makes you wonder, doesn’t it!?!
So here you’ll take a small saucepan and melt in it the butter. Stir in the flour and pepper until smooth and then slowly pour in the milk. Bring it to a boil and stir until thickened (1 to 2 minutes).
Stir this into the sausage mixture, add the cubed Velveeta cheese and heat through until cheese is melted.
Now it’s time to gather your family and friends around the table and ladle out this creamy, flavorful chowder. Add some hot buttered quick rolls and they’ll love you forever!
(Seriously, they’ll offer to wash your dishes, move that load of laundry into the dryer, go clear off the bar and do the animal chores.. No joke!) This chowder really gets people’s attention. I recommend making all deals before they eat it because by the time they’re done everyone will be so stuffed they won’t want to move.. Just a little friendly advice!
