No oil, no frying, no mashing… These are my kind of potatoes! They’re quick and simple to throw together and then pop in the oven, which means no more mess on top of the stove anymore! You can change the seasonings to suit how spicy or salty you like them, but these measurements will get you a very nice, flavorful potato!
Start by washing the potatoes. Cut into 1/2 inch cubes. In a large cast iron skillet, lay a piece of aluminum foil that extends out over most of the edges by a couple of inches. Spread the potatoes on top of the foil.
Top with the seasonings and pats of butter.
Fold the foil over and pinch to seal it all inside. Place in a 350-degree oven for 30 minutes or until tender when poked with a fork.
Serve with chicken fried steak, gravy, and a salad! Enjoy!
Southern 30-Minutes Skillet Potatoes

- 2 lg russet potatoes
- 1 t seasoned salt
- 1/2 t paprika
- 1/2 t garlic powder
- 1/2 t pepper
- 1/8 t cayenne
- 4 T butter
