Gluten-Free Breakfast Cookie

Ingredients
  

  • 3/4 - 1 cup oat bran
  • 1 1/2 cups oats
  • 2 banana mashed
  • 1/2 cup raisins
  • 1/2 cup craisins
  • 1/2 cup applesauce
  • 1/2 t. vanilla
  • 1/4 t. cinnamon
  • 1/2 t. honey
  • 1/8 t. nutmeg
  • 1/8 t. salt

Instructions
 

  • Preheat oven to 325 degrees.
  • Start by combining the applesauce, vanilla, cinnamon, honey, nutmeg, and salt.
  • In another bowl, combine the oat bran, oats, mashed bananas, raisins, and craisins. Stir in the applesauce mixture.
  • Place cookie dough in balls on a cookie sheet and flatten to desired thickness.
  • Bake for 17-20 minutes and cool on a cookie rack.
