Simple, Sweet and Savory BBQ Meatballs

A quick meatball you can make and throw in the freezer or eat right away with a simple BBQ sauce that goes right over the top of them!

Ingredients
  

Meatballs

  • 1 onion chopped
  • 1 - 2 sleeves Saltine crackers
  • 2 pounds ground beef
  • 3 eggs
  • 3 T. honey mustard
  • 1/2 cup ketchup
  • 1 t. Worcestershire sauce
  • Salt and Pepper

BBQ Sauce

  • 1/2 cup ketchup
  • 1 1/2 cups BBQ sauce I use Sweet Baby Ray's
  • 1 1/2 cups brown sugar

Instructions
 

  • Preheat oven to 400 degrees.
  • Chop onion into small pieces.
  • Add crackers to a Ziploc bag and crush with a rolling pin.
  • In a large mixing bowl, combine together all of the meatball ingredients using your hands to mix.
  • Roll into 2-inch balls and place on a foil lined baking sheet that was sprayed with non-stick spray.
  • Bake for 20 minutes or until crispy and brown on the outside, and brown on the inside too. (If throughly cooked, there should be no pink inside the meatballs!)
  • Make the sauce by combining together the ketchup, BBQ sauce, and brown sugar.
  • Spoon a couple of tablespoons of sauce over each meatball.
  • Serve and enjoy!

Notes

Can try freezing meatballs after they have been throughly cooked, but before the sauce is made and put over them. Make the BBQ sauce when they're thawed and reheated.
