Curled up at my desk with a steaming cup of hot cocoa, while listening to Don William’s Greatest Hits and the bulls bellowing outside – Life is good! One of the things that has made life so good recently was finding a little scrap of paper in great-grandma’s recipe box with “Hillbilly Pie” wrote across the top of it.
Glancing over the recipe, it looked quite simple and really yummy! A small list of ingredients, short baking time, and it being a recipe from at least three generations ago, made this one that I definitely wanted to try – I’m glad I did!
It was semi-sweet, yet (thanks to the cherry pie filling) it had a little bit of tang to it. A sprinkle of cinnamon and sugar on the top gave it the extra little hint of sweet it needed!
You’ll need:
1 cup flour
1 cup sugar
1 T. baking powder
1 cup milk
1 (21 ounce) can pie filling (any kind)
1/2 cup (1 stick) butter
Topping:
2 T. sugar
1 t. cinnamon
1 T. flour
Start by combining together the flour, sugar, and baking powder in a bowl.
Stir in the milk.
Stir it until it’s nice and “lumpy-free”!
Melt a stick of butter in a 9 by 13-inch pan.
Pour over the melted butter the flour mixture. Don’t stir it!
Drop the pie filling evenly on top by spoonfuls. (I used cherry since I was in the mood for it, but you can use any kind you like!)
In a small bowl, mix together the sugar, cinnamon and flour for your topping. Sprinkle it over the cherries and then bake at 350 degrees for 30 – 40 minutes.
Pull out and cool before serving with a nice, big dollop of vanilla ice-cream! One thing unique to this dessert – As soon as you pull it out of the oven, it starts to cool and the pie filling stops bubbling up. It’ll all settle down and leave you “canyons” with a “river” of pie filling in the bottom!

- Spoon the pie filling on evenly.
- In a small bowl, mix together the sugar, cinnamon, and flour for the topping and sprinkle over the pie filling.
- Bake for 30 - 40 minutes or until a light golden brown.
- Cool before serving and enjoy!

Baked this tonight and idk what I did wrong but it didn’t turn out as pictured.
no “canyons”….the taste was ok though
may try again since it only calls for a few simple ingredients

My grandmother made what she called hillbilly pie hers looked different also maybe there are different family recipes for the same thing

It’s not every day I come across someone who listens to Don Williams! He was one of my favorite country music singers when I was young. I love finding old family recipes. This prairie pie sounds wonderful! And I love how easy it is to put together.
