Chocolate Cream Cheese Peanut Butter Bangles

Very similar to thumbprint cookies, it’s a yummy, simple, peanut butter cookie with a soft, chocolate – cream cheese filling.

Ingredients
  

Cookies

  • 2 sticks soft butter
  • 2 cups brown sugar
  • 1 1/2 cups creamy peanut butter
  • 2 eggs
  • 1 1/2 t. vanilla
  • 2 1/2 cups flour
  • 1 t. baking powder
  • 1 t. baking soda

Filling

  • 3 ounces soft cream cheese
  • 3 T. light corn syrup
  • 1/2 t. vanilla
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat oven to 350 degrees.
  • Start by mixing together the butter, brown sugar, and peanut butter. Mix until it’s well blended and then add in the eggs and vanilla. Beat well!
  • In a separate bowl, stir together the flour, baking powder, and baking soda.
  • Gradually add the flour mixture into the peanut butter and stir gently until it’s all mixed in.
  • Shape into 1-inch balls and place on an ungreased cookie sheet.
  • Press your thumb gently into each ball to make a dimple and then bake for 8 to 10 minutes.
  • When they come out of the oven, they’ll look like semi-flat little marshmallow-like cookies.. Take a teaspoon and press it in the middle of them to give them a dimple again, and then let cool for a few minutes!
  • Now for the yummy filling! Melt the chocolate chips in a bowl and set aside for a few minutes.
  • In another bowl, beat together the cream cheese, corn syrup, and vanilla.
  • Stir into the chocolate, still beating together, and then gradually add in the powdered sugar.
  • Beat together a little longer and then use a butter knife to swirl it onto the cookies gently.
  • Let sit for a few minutes and then serve or store in an airtight container in the refrigerator.
