A favorite meatball recipe in our family now, these sweet and savory BBQ meatballs are so simple to throw together and taste great with some mashed potatoes and green beans or corn on the side.
I would mention something about freezing them (without BBQ sauce) and making the sauce when you pull them out to thaw… But I rather doubt you’ll have any leftovers to freeze!
Meatballs:
1 onion, chopped
1 – 2 sleeves saltine crackers
2 pounds ground beef
3 eggs
3 T. honey mustard
1/2 cup ketchup
1 t. Worcestershire sauce
Salt and Pepper
BBQ Sauce:
1/2 cup ketchup
1 1/2 cups BBQ sauce (I use Sweet Baby Ray’s)
1 1/2 cups brown sugar
Start by chopping up your onion.
Put the Saltines into a Ziploc bag and use a rolling pin to crush them into crumbs and small pieces.
In a large mixing bowl, combine together the onion, crackers, ground beef, eggs, honey mustard, ketchup, Worcestershire sauce, salt and pepper.
Get your hands into the bowl and start mixing this all together! It’ll be a little sloppy in the beginning, but it’ll work out perfectly!
Now, once all of the ingredients have been mixed together throughly, line a large baking sheet with aluminum foil and spray it with non-stick spray. Start pulling out handfuls of the beef mixture and shape it into two-inch balls. Remember, the bigger you make the meatballs, the longer they can take to cook through into the center!
Bake the meatballs at 400 degrees for 20 minutes. While they’re cooking, you can get started on the BBQ sauce!
For the sauce, you’ll need to mix together the ketchup, BBQ sauce, and brown sugar. Stir until there are no lumpy brown sugar clumps in it!
When the meatballs are done, they should be a nice brown on the outside and cooked through and brown on the inside, pull them out and then….
Top with a couple of tablespoons of sauce for each one. Serve right away or you can try freezing them before you make the sauce. Bake, freeze, and then make and top with the sauce when thawed and reheated.
Serve with a big pile of mashed potatoes (possibly some gravy?) and green beans or corn on the side.
Enjoy!
