If you think this recipe looks familiar, that’s because one of the most popular recipes on PGC has just gotten a makeover! Hillbilly Pie is a recipe that I found on an old crumpled up piece of paper in my great-grandma’s recipe box. It was faded and well used and I figured it had to be something good to make.. And am I ever glad I made it! It was amazing! (And apparently, a lot of you thought so too as that recipe was a big hit!)
So here today I’m sharing a new twist to an old classic – Apple Cinnamon Hillbilly Pie. If you thought the first version was good, you’ll love this one! It’s still just as simple, only it uses apples and some spices to give it a little punch. Maybe it’d be easier if I just show you how to make it rather than try to explain…
You’ll need:
Batter:
1 cup flour
1 cup sugar
1 T. baking powder
1/2 t. cinnamon
1/4 t. cloves
1/8 t. nutmeg
1/4 t. vanilla
1 cup milk
1 (21 ounce) can apple pie filling (I used homemade apple pie filling here)
1/2 cup (1 stick) butter
Topping:
2 T. sugar
1 t. cinnamon
1 T. flour
To get started, mix together the flour, sugar, baking powder, cinnamon, cloves and nutmeg.
After it’s all been mixed together, pour in the milk and then add the vanilla. Stir together and set aside for a minute!
Grab your 9 x 13 inch pan and melt a stick of butter (1/2 cup) in it…
Then just pour all of the batter into the pan on top of the butter! Do NOT stir this! Just let it sit and then the oven will do all the work for you!
So now just sit and look at it for awhile… Just kidding! Now it’s time to break out the pie filling!
We used some homemade pie filling with apples straight from the tree, but you can use store bought too! Just grab a fork and spread it out evenly over the batter.
Now in another bowl, mix together the topping…
And sprinkle all over the apples and batter. Bake at 350 for 30 – 40 minutes or until golden brown and cooked through in the center.
Yummy!!! Now it’s time to go find that vanilla ice-cream… Hmmm.. I know I just saw it somewhere!
This is such a simple recipe to whip together your guests will think you spent hours laboring over it! (But shuush.. We don’t need to tell them otherwise!)
Serve warm with a big scoop of ice-cream and a smile – Enjoy!

Just to make sure–you melt the butter in the pan in the oven, so the batter is poured into a hottish pan?

Yes, that’s right! If you can’t take time to melt it in the pan, you can also melt it beforehand (like in the microwave) and then just pour it into the pan.

My mamaw(grandmother) would use sort of the similar recipe when making cobblers(blackberry,blueberry ,and strawberry.Your take brings back fond memories and I can’t wait to try!!!!!!!!!!!

Quick question….if I use fresh apples for the filling do I need to cook them first? If I use canned then obviously they are already halfway there. Thank you!

You could use fresh apples too I believe, but they wouldn’t have the spices and yummy filling in there that pie filling does!
