Pizza in and of itself is good, I think we can all agree on that!
Skillet pizza is great…
Alfredo pizza is even better…
But put it all together and it’s amazing!
This Chicken Pepper Alfredo Skillet Pizza is simple to whip together in a hurry, especially if you have the dough sitting in the fridge ready to go like I did. Then it’s done in the blink of an eye!
The mixture of red peppers and chicken not only gives it that pretty contrast of color, but it also gives it a crunch you will love. Add some creamy, homemade alfredo sauce, and there’s no way you can go wrong!
You’ll need:
Dough:
1 1/4 cups flour
1/4 t. salt
1 1/4 t. instant yeast
1/2 cup very warm water
Alfredo Sauce:
1/4 cup (1/2 stick) butter
1/2 of an 8 oz. brick of cream cheese
1 t. garlic powder
1/4 t. garlic salt
3/4 cup milk
1/3 heaping cup grated Parmesan cheese
1/2 red pepper, coarsely chopped
Start by placing the chicken breasts in a cast iron skillet and pour a little olive oil and black pepper over them. Set some foil or a lid over the skillet and set to cook on low heat.
Mix together the ingredients for the dough and then spread it out in a cast iron skillet with a little bit of olive oil in the bottom.
Now it’s time to whip together the Alfredo sauce! Start by melting together the butter and cream cheese. Be careful not to let it burn or boil!
Once it’s all melted (it won’t combine together, but rather be somewhat separated like it is here!), you’ll add the salt and pepper…
Gradually stir in the milk, one cup at a time…
And then the parmesan cheese and garlic powder/salt. Continue to stir this for a little bit longer, until it’s all melted/mingled together well and then set aside. Might want to check on your chicken about now!
Now grab that red pepper and chop it up rather coarsely.
Do the same with those chicken breasts, chop them up and set aside for a few more minutes!
Okay, so your sauce is done, chicken and peppers are cut up, and you just have one more thing to take care of…
That crust needs cooked for a little bit! I just broiled mine in the oven for about 5 minutes, or until the crust was bubbly and starting to brown.
Pull that crust out and it’s time to assemble the pizza! Start by spooning the Alfredo sauce over it…
I did a fairly liberal amount, after all, this is an Alfredo pizza, right?
Right.
And in that case, you need a lot of Alfredo, right?
Right.
You need to make it worth your while!
So feel free to use as much sauce as you want to…
Go ahead, I won’t judge!
After you’ve finished smothering the crust with sauce, layer on the peppers and chicken pieces.
And then add a little more sauce on top of that!
Like I said, this is an Alfredo pizza.. Ya gotta get all of the Alfredo on it you can!
Cook the pizza at 375 degrees for 25 – 30 minutes or until it’s all hot, bubbly, and starting to brown!
As soon as it’s out of the oven, grab a slice, sit back and relax!
It’ll make all of your problems go away..
Okay, well, no promises on that… But it’ll at least help!
